Lifeful Organica Matcha Carrot Almond Cookies Recipe
Yields: Approximately 18-20 cookies Prep time: 15 minutes Bake time: 12-15 minutes
Ingredients:

1 cup almond flour
1/2 cup oat flour (or more almond flour for a gluten-free option)
1/4 cup Lifeful Organica Japanese Matcha
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
1/2 cup unsalted butter, softened (or coconut oil for dairy-free)
1/2 cup packed light brown sugar (or coconut sugar for a refined sugar-free option)
1 large egg
1 teaspoon vanilla extract
1 cup finely grated carrots (about 2 medium carrots)
1/2 cup chopped almonds (or slivered almonds)
Optional glaze: 1/2 cup powdered sugar, 1-2 teaspoons milk (or plant-based milk), 1/4 teaspoon Lifeful Organica Japanese Matcha for a subtle green hue
Instructions:
Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Whisk Dry Ingredients: In a medium bowl, whisk together the almond flour, oat flour, Lifeful Organica Japanese Matcha, baking powder, cinnamon, nutmeg, and salt. Set aside.
Cream Wet Ingredients: In a large bowl, cream together the softened butter (or coconut oil) and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overmix!
Fold in Carrots & Almonds: Gently fold in the finely grated carrots and chopped almonds until evenly distributed throughout the dough.
Scoop & Bake: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between cookies. Slightly flatten each cookie with the back of a spoon.
Bake: Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. 9. Optional Glaze (if desired): In a small bowl, whisk together the powdered sugar, milk (add gradually until desired consistency), and 1/4 teaspoon of Lifeful Organica Japanese Matcha until smooth.
